Rice endosperm starch phosphorylase (Pho1) assembles with disproportionating enzyme (Dpe1) to form a protein complex that enhances synthesis of malto-oligosaccharides. The early activation of OsPHO1 and OsDPE1 is consistent with their involvement in the initiation event of starch biosynthesis in endosperm of rice seeds (Ohdan et al., 2005; Akdogan et al., 2011). OsPho1:OsDpe1 complex showed enhanced substrate affinities at 30°C similar to those measured at 20°C, indicating that the interaction of OsPho1 with OsDpe1 eliminated the temperature effect on substrate binding properties. OsPho1:OsDpe1 complex can significantly enhance the synthesis of larger malto-oligosaccharides by utilizing more diverse substrates available in rice endosperm (Hwang et al., 2016).
