Summation

The rice granule-bound starch synthase 1 (GBSSI, or Waxy) gene is required for the synthesis of amylose in the endosperm. Loss-of-function mutations of the rice GBSSI (Waxy) gene produce an amylose-free endosperm. In the rice endosperm, amylose is mainly synthesized by GBSSI (Waxy). Therefore, differences in the apparent amylose content (AAC) in rice varieties are closely correlated with natural allelic variation at the Wx locus (Zhang et al, 2017)
